About the Role
We are currently seeking a Restaurant Manager to join our pre-opening team at Manhattan Grand Hotel. This role is responsible for leading the daily operations of the hotel's signature restaurant, building a team culture of craftsmanship and connection, and delivering a dining experience that reflects the highest standards of global sophistication with genuine Maldivian warmth.
Key Responsibilities:
- Oversee the daily operations of the restaurant, ensuring consistent, high-quality service across all meal periods.
- Lead, train, and motivate the restaurant team to deliver attentive, knowledgeable, and personalised guest service.
- Manage restaurant financial performance, including revenue, cost control, labour scheduling, and profitability targets.
- Collaborate closely with the Executive Chef and kitchen team to ensure seamless coordination between service and culinary operations.
- Handle guest feedback, complaints, and special requests promptly, ensuring full resolution and guest satisfaction.
- Maintain rigorous standards of hygiene, food safety, and compliance with health and safety regulations.
- Develop and implement service standards, sequence of service, and Standard Operating Procedures for the outlet.
- Monitor inventory, stock levels, and supplier coordination in collaboration with Purchasing and Stores.
- Plan and execute promotions, special events, and themed dining experiences to drive covers and revenue.
- Ensure compliance with the Hotel's brand standards, grooming guidelines, and Standard Operating Procedures.
About You
To excel in this role, you should have:
- Minimum 3–5 years of experience as a Restaurant Manager or Assistant Restaurant Manager, preferably within an upscale or luxury hospitality environment, with pre-opening experience considered an advantage.
- Strong knowledge of restaurant operations, service standards, and F&B financial management.
- Proven leadership ability with experience building and developing a service team from the ground up.
- Excellent guest relations skills with a genuine passion for hospitality and attention to detail.
- Sound understanding of food safety, hygiene regulations, and licensing requirements.
- Strong organisational and multitasking skills in a fast-paced, high-volume environment.
- Working knowledge of POS systems and F&B cost control practices.
- Flexibility to work rotating shifts, including evenings, weekends, and public holidays as required.
