About the Role

We are currently seeking a Sous Chef to join our pre-opening team at Manhattan Grand Hotel. This role supports the Executive Chef in leading kitchen operations, ensuring consistent culinary excellence, and building a strong, disciplined kitchen team ahead of the hotel's launch.

Key Responsibilities:

  • Support the Executive Chef in overseeing daily kitchen operations across assigned outlets, ensuring consistent food quality and presentation.
  • Supervise and coordinate the Chef de Partie and junior culinary team during service, ensuring smooth kitchen flow and timely execution.
  • Assist in menu development, recipe standardisation, and dish costing in line with the Hotel's culinary concept and brand identity.
  • Monitor food quality, portion control, and plating standards to ensure consistency across all outlets and shifts.
  • Train, mentor, and develop junior chefs, fostering technical skill development and adherence to kitchen standards.
  • Manage kitchen operations in the absence of the Executive Chef, including staffing, ordering, and service oversight.
  • Ensure strict compliance with food safety, hygiene, and HACCP standards throughout all kitchen sections.
  • Coordinate with the Chief Steward and Purchasing team on stock levels, ordering, and minimising food wastage.
  • Support pre-opening kitchen readiness, including equipment testing, recipe trials, and staff training programs.
  • Ensure compliance with the Hotel's brand standards, health and safety regulations, and Standard Operating Procedures.

About You

To excel in this role, you should have:

  • Minimum 4–5 years of progressive culinary experience, including at least 1–2 years as a Sous Chef or senior Chef de Partie, preferably within an upscale or luxury hospitality environment, with pre-opening experience considered an advantage.
  • Formal culinary qualification from a recognised culinary institute.
  • Strong knowledge of international cuisine, kitchen operations, and food cost control.
  • Proven ability to lead and develop a culinary team in a fast-paced, multi-outlet environment.
  • Sound understanding of food safety, hygiene, and HACCP compliance requirements.
  • Strong organisational skills with meticulous attention to quality and presentation standards.
  • Excellent communication and leadership skills, with the ability to train and motivate junior chefs.
  • Flexibility to work variable hours, including evenings, weekends, and public holidays, particularly during the pre-opening phase.
