About the Role

We are currently seeking an Executive Chef to join our pre-opening team at Manhattan Grand Hotel. This role holds full culinary leadership responsibility for the hotel, shaping menus, kitchen operations, and a culture of craftsmanship that brings global sophistication and Maldivian warmth to every dining experience.

Key Responsibilities:

  • Lead and manage all culinary operations across the hotel's restaurants, banqueting, and in-room dining outlets.
  • Design and develop menus that reflect the Hotel's brand identity, balancing global cuisine with Maldivian influences and seasonal ingredient availability.
  • Recruit, train, and develop the culinary team, building a strong kitchen culture and technical standard ahead of and following hotel opening.
  • Prepare and manage the culinary department budget, controlling food costs, labour, and wastage while maintaining quality standards.
  • Establish and enforce food safety, hygiene, and sanitation standards across all kitchen operations, in line with HACCP principles and local regulations.
  • Oversee menu costing, supplier selection, and procurement standards in coordination with Purchasing and the Chief Steward.
  • Collaborate with the F&B Manager and Restaurant Managers to align culinary output with service standards and guest experience goals.
  • Lead kitchen readiness for pre-opening, including equipment specification input, recipe standardisation, and staff training programs.
  • Drive innovation and quality consistency across all culinary outlets, banquets, and special events.
  • Ensure compliance with the Hotel's brand standards, health and safety regulations, and Standard Operating Procedures.

About You

To excel in this role, you should have:

  • Minimum 7–10 years of progressive culinary experience, including at least 3–5 years as Executive Chef or Executive Sous Chef, preferably within an upscale or luxury hospitality environment, with pre-opening experience considered a strong advantage.
  • Formal culinary qualification from a recognised culinary institute.
  • Strong knowledge of international cuisine, menu engineering, and food cost management.
  • Proven leadership ability with experience building and developing a large, multi-outlet culinary team from the ground up.
  • Sound understanding of food safety, hygiene, and HACCP compliance requirements.
  • Strong budgeting, forecasting, and P&L management skills.
  • Excellent creativity, organisational skills, and attention to detail in menu development and execution.
  • Certification in Food Safety/HACCP will be considered a strong advantage.
  • Flexibility to work variable hours, including evenings, weekends, and public holidays, particularly during the pre-opening phase.
