About the Role

We are currently seeking a Chef de Partie (Hot and Cold Kitchen) to join our pre-opening team at Manhattan Grand Hotel. This role holds responsibility for a designated section of the kitchen, delivering consistent quality, precision, and creativity across hot and cold food preparation in line with the Hotel's culinary standards.

Key Responsibilities:

  • Oversee the preparation, cooking, and presentation of dishes within the assigned hot or cold kitchen section, ensuring consistency and quality.
  • Follow standardised recipes, portion specifications, and plating guidelines set by the Sous Chef and Executive Chef.
  • Supervise and guide Demi Chef de Partie and Commis Chefs within the section, ensuring proper technique and workflow.
  • Monitor stock levels, mise en place, and ingredient freshness within the section, minimising wastage.
  • Maintain strict food safety, hygiene, and sanitation standards in accordance with HACCP principles and Hotel policy.
  • Coordinate closely with other kitchen sections to ensure timely and synchronised order execution during service.
  • Assist in menu development, recipe testing, and costing input for the assigned section as required.
  • Ensure proper storage, labelling, and rotation of ingredients (FIFO) within the section.
  • Support pre-opening kitchen readiness, including equipment testing, recipe trials, and section setup.
  • Ensure compliance with the Hotel's brand standards, health and safety regulations, and Standard Operating Procedures.

About You

To excel in this role, you should have:

  • Minimum 2–3 years of experience as a Chef de Partie, preferably within an upscale or luxury hospitality environment, with hot or cold kitchen section experience.
  • Formal culinary qualification from a recognised culinary institute.
  • Strong technical knowledge of hot and/or cold kitchen preparation techniques, depending on section assignment.
  • Sound understanding of food safety, hygiene, and HACCP compliance requirements.
  • Proven ability to lead and guide junior kitchen colleagues within a section.
  • Strong organisational skills with attention to consistency, quality, and presentation standards.
  • Ability to work efficiently under pressure during high-volume service periods.
  • Flexibility to work variable hours, including evenings, weekends, and public holidays, particularly during the pre-opening phase.
