About the Role
We are currently seeking a Chef de Partie (Bakery) to join our pre-opening team at Manhattan Grand Hotel. This role holds responsibility for the hotel's bakery section, delivering fresh breads, pastries, and baked goods of consistent quality and craftsmanship across all outlets, banquets, and guest occasions.
Key Responsibilities:
- Oversee the daily preparation, baking, and presentation of breads, pastries, and baked goods for all hotel outlets and banquet functions.
- Follow standardised recipes, formulations, and presentation guidelines set by the Executive Chef, ensuring consistency across all baked items.
- Plan and manage daily bakery production schedules to meet outlet, banquet, and in-room dining requirements.
- Supervise and guide Demi Chef de Partie and Commis Chefs within the bakery section, ensuring proper technique and workflow.
- Monitor ingredient stock levels, freshness, and proper storage within the bakery section, minimising wastage.
- Maintain strict food safety, hygiene, and sanitation standards in accordance with HACCP principles and Hotel policy.
- Coordinate with the Pastry/Bakery Jr. Sous Chef and Executive Chef on seasonal menu items, special orders, and event requirements.
- Ensure proper handling, labelling, and rotation of ingredients (FIFO) within the bakery section.
- Support pre-opening kitchen readiness, including equipment testing, recipe trials, and bakery section setup.
- Ensure compliance with the Hotel's brand standards, health and safety regulations, and Standard Operating Procedures.
About You
To excel in this role, you should have:
- Minimum 2–3 years of experience as a Chef de Partie (Bakery) or Baker, preferably within an upscale or luxury hospitality environment.
- Formal culinary or bakery/pastry qualification from a recognised culinary institute.
- Strong technical knowledge of bread-making, laminated dough, and baked goods production techniques.
- Sound understanding of food safety, hygiene, and HACCP compliance requirements.
- Proven ability to plan production schedules and guide junior bakery colleagues.
- Strong organisational skills with attention to consistency, quality, and presentation standards.
- Ability to work efficiently under pressure during high-volume production and event periods.
- Flexibility to work variable hours, including early mornings, weekends, and public holidays, particularly during the pre-opening phase.
