About the Role

We are currently seeking a Butcher to join our pre-opening team at Manhattan Grand Hotel. This role is responsible for the preparation, portioning, and quality control of meat and poultry products, ensuring the culinary team is consistently supplied with ingredients of the highest quality and precision.

Key Responsibilities:

  • Prepare, cut, portion, and trim meat, poultry, and other proteins to specification for all hotel kitchens and outlets.
  • Inspect incoming meat and poultry deliveries for freshness, quality, and compliance with Hotel specifications.
  • Maintain accurate portion control and minimise wastage through precise cutting and utilisation of by-products.
  • Store, label, and rotate meat products correctly (FIFO) to maintain freshness and reduce spoilage.
  • Maintain strict food safety, hygiene, and sanitation standards in accordance with HACCP principles and Hotel policy.
  • Coordinate with the Executive Chef, Sous Chef, and Purchasing team on daily requirements, forecasting, and specifications.
  • Maintain cleanliness and proper sanitation of the butchery area, tools, and equipment at all times.
  • Ensure safe handling, sharpening, and maintenance of knives and butchery equipment.
  • Support pre-opening kitchen readiness, including equipment setup, supplier trials, and specification standardisation.
  • Ensure compliance with the Hotel's brand standards, health and safety regulations, and Standard Operating Procedures.

About You

To excel in this role, you should have:

  • Minimum 2–3 years of experience as a Butcher, preferably within an upscale or luxury hospitality environment, or a commercial butchery/meat processing facility.
  • Strong technical knowledge of meat and poultry cutting, portioning, and quality assessment techniques.
  • Sound understanding of food safety, hygiene, and HACCP compliance requirements.
  • Proficiency in the safe use, sharpening, and maintenance of butchery knives and equipment.
  • Strong attention to detail, particularly in portion control, yield management, and waste reduction.
  • Good physical stamina, with the ability to work in cold storage environments and handle heavy items.
  • Ability to work efficiently under pressure during high-volume production periods.
  • Flexibility to work variable hours, including early mornings, weekends, and public holidays, particularly during the pre-opening phase.
