About the Role

We are currently seeking a Demi Chef de Partie (Pastry) to join our pre-opening team at Manhattan Grand Hotel. This role supports the Pastry/Bakery section, assisting in the preparation of desserts, pastries, and confectionery items while developing the technical skill and precision required to grow within the Hotel's culinary team.

Key Responsibilities:

  • Assist the Chef de Partie (Bakery/Pastry) in the preparation, production, and presentation of desserts, pastries, and confectionery items.
  • Prepare mise en place accurately and on schedule, ensuring ingredients are ready ahead of service and production runs.
  • Follow standardised recipes, formulations, and presentation guidelines to maintain consistency across all pastry items.
  • Support the production of items for restaurant desserts, banquet functions, afternoon tea, and special guest occasions.
  • Maintain cleanliness and organisation of the pastry workstation, equipment, and storage areas throughout and after production.
  • Monitor ingredient freshness and proper storage within the section, reporting quality concerns to the Chef de Partie.
  • Maintain strict food safety, hygiene, and sanitation standards in accordance with HACCP principles and Hotel policy.
  • Assist with receiving, checking, and properly storing pastry and bakery deliveries in coordination with the Stores team.
  • Support senior pastry chefs during high-volume production periods, banquets, and special events as required.
  • Support pre-opening kitchen readiness, including equipment familiarisation and recipe training.
  • Ensure compliance with the Hotel's brand standards, health and safety regulations, and Standard Operating Procedures.

About You

To excel in this role, you should have:

  • Minimum 2 years of experience as a Demi Chef de Partie (Pastry) or Commis Pastry Chef, preferably within an upscale or luxury hospitality environment.
  • Formal culinary or pastry qualification from a recognised culinary institute preferred.
  • Sound technical knowledge of pastry, dessert, and confectionery preparation techniques.
  • Sound understanding of food safety, hygiene, and HACCP compliance requirements.
  • Strong attention to detail, precision, and consistency in presentation.
  • Ability to work efficiently under pressure during high-volume production and event periods.
  • Willingness to learn and take direction from senior pastry and culinary colleagues.
  • Flexibility to work variable hours, including early mornings, weekends, and public holidays, particularly during the pre-opening phase.
