About the Role
We are currently seeking a Commis Chef (Hot/Cold Kitchen) to join our pre-opening team at Manhattan Grand Hotel. This role provides foundational support within the kitchen, assisting section chefs with food preparation and contributing to the consistent quality and presentation of every dish that leaves the kitchen.
Key Responsibilities:
- Assist the Chef de Partie and Demi Chef de Partie with food preparation, cooking, and plating within the assigned hot or cold kitchen section.
- Prepare mise en place accurately and on schedule, ensuring ingredients are ready ahead of service.
- Follow standardised recipes, portion specifications, and plating guidelines to maintain consistency across all dishes.
- Maintain cleanliness and organisation of the workstation, equipment, and storage areas throughout and after service.
- Assist with receiving, checking, and properly storing deliveries in coordination with the Stores team.
- Support senior chefs during high-volume service periods, banquets, and special events as required.
- Maintain strict food safety, hygiene, and sanitation standards in accordance with HACCP principles and Hotel policy.
- Rotate stock correctly (FIFO) and report any quality or freshness concerns to the section chef.
- Support pre-opening kitchen readiness, including equipment familiarisation and recipe training.
- Ensure compliance with the Hotel's brand standards, health and safety regulations, and Standard Operating Procedures.
About You
To excel in this role, you should have:
- Minimum 1 year of experience as a Commis Chef or in a similar entry-level culinary role, preferably within an upscale or luxury hospitality environment.
- Formal culinary qualification or relevant vocational training preferred.
- Basic knowledge of hot and/or cold kitchen preparation techniques, depending on section assignment.
- Sound understanding of food safety, hygiene, and basic HACCP principles.
- Willingness to learn and take direction from senior kitchen colleagues.
- Ability to work efficiently under pressure during high-volume service periods.
- Good physical stamina, with the ability to stand for extended periods in a fast-paced kitchen environment.
- Flexibility to work variable hours, including evenings, weekends, and public holidays, particularly during the pre-opening phase.
